Ingredients (Serves 100)
4 fresh coconuts, about 7 pounds
One 18-by-26-inch piece of 3/16-inch-thick foam board
7 quarts heavy cream
1 recipe Meringue Disks
Eight 6-inch-long wooden dowels or 8 wooden skewers
